Turkey and Rice Casserole
Makes: 4 servings
- 1 lb. ground turkey
- 1 bag boil-in-a-bag brown rice
- 1 cup mixed veggies
- 1 can cream of mushroom soup
- 1 cup low fat shredded cheese (optional)
Cook ground turkey on stovetop until well done. Boil rice as indicated by package directions. Chop veggies into small pieces. In a large bowl, combine turkey, rice, veggies, and cream of mushroom soup.
Preheat oven to 350°F. Pour turkey mixture into a large casserole dish, and top with shredded cheese. Bake for 10 to 15 minutes. Garnish with basil if desired.
